When to plant jerusalem artichoke
NC State Extension says Jerusalem artichoke tubers may be planted in early spring, much like potatoes: plant whole tubers or pieces with two to three strong buds, and do not let the pieces dry out before planting. Tubers are harvested in fall about two weeks after the flowers fade.
